Description of production; Grapes are harvested in 10 kg box, the harvest is done manually.
Grapes are harvested at the moment of full ripeness.
Manual selection of berries is performed on the selection table. Alcoholic fermentation takes place in stainless steel tanks from 3000 liters to 8700 liters. Vinification takes place separately for each micro locality, and each variety. Depending on the type of grape, the techniques of remontage, delastage and punching down are combined. Maceration take place from 20 to 30 days
Malolactic fermentation takes place in stainless steel tanks
After malolactic fermentation, each lot is separately racked to age in barrel 225 liters. Wine is aged for 14 months in barriques and is racked every 4 months from sediment and returned to the barriques.
After 14 months we do the blend and fill the wine. Before putting the wine on the market, the wine spends about 1 year in the bottle.
